Gạo, nếp vo sạch để ráo, sau đó rang gạo trong nồi cho khô và se lại, nhưng không vàng.
Cá làm sạch, cắt khoanh. Ướp nữa muống canh đường và một muỗng cà phê muối khoảng 15 phút, sau đó vớt ra để ráo, lăn qua lớp bột bắp.
Nấm rơm cắt gốc, làm sạch, rửa rồi cắt đôi, để ráo.
Cho 1 lít nước và nếp vào nồi nấu sôi trong lửa lớn, vớt bọt, đậy nắp và hạ lửa, đun tiếp khoảng 1 giờ cho tới khi gạo nhừ và sánh (nếu cháo đặc quá thì thêm nước). Khi cháo đã nhừ nêm nếm đường, muối, nước mắm, hạt nêm.
Tiếp tục cho cá vào, đun thêm từ 2 -3 phút, vớt bọt, khi thịt cá từ màu trong chuyển sang màu đục thì tắt bếp. Cuối cùng cho nấm rơm, dầu ăn vào, khuấy nhẹ tay.
Khi ăn múc cháo ra tô, cho tiêu, ngò, tỏi và hành phi lên trên, nước mắm ớt chấm cá. Món này ăn nóng mới ngon.
